Along with garlic and lemon, olive oil is one of the ‘holy trinity’ ingredients in a kitchen. According to Greek mythology, the olive tree was gifted to the citizens of Athens by the Goddess Athena, for voting to name the city after her. Thank goodness they voted for her that day and not Poseidon; I can’t imagine a kitchen without glorious olive oil!
